Fluffy pancakes made with soy flour and ricotta so they are high in protein.

Recipe Ingredients for Ricotta Pancakes

4 eggs
1 cup ricotta cheese, part skim
1/2 tsp. vanilla extract
1/3 cup soy flour
1 tbsp. extra virgin olive oil
1 pinch cinnamon
1 tsp. splenda

Recipe Directions for Ricotta Pancakes

  1. Mix all ingredients together.

  2. Cook as you would regular pancakes, dropping batter down into a pan.

  3. These are a bit less sturdy than normal pancakes, so wait until they are fairly solid before you flip them. Cook on low heat to ensure that they do not burn.
