Sub flour for wheat flour to make it healthier.

Recipe Ingredients for Ricotta Gnocchi

2 lbs. part skim ricotta cheese
5 egg yolks
1 cup flour
2 cup grated parmesan cheese

Recipe Directions for Ricotta Gnocchi

  1. Combine all ingredients thoroughtly.

  2. Divide dough into pieces and roll each piece into a 1 inch thick log.

  3. Slice each log into 3/4 inch pieces.

  4. Place in boiling salted water.

  5. When gnocchi rises, it's done.

  6. Place cooked gnocchi on a tray or cookie sheet in a single layer.

  7. Add olive oil to coat.
