balanced/low carb ricotta fritters. you can substitute almond or coconut flour for the all purpose flour if desired to make even more low carb.

Recipe Ingredients for Ricotta Fritters/low carb

4 eggs
1/4 cup sugar
1 lb ricotta cheese
1/2 tsp. vanilla extract
1/2 cup all purpose flour
1/2 cup cake flour
1 tbsp. baking powder
1 pinch salt

Recipe Directions for Ricotta Fritters/low carb

Mix eggs and sugar together. Add ricotta and vanilla. In a separate bowl sift together all-purpose flour, cake flour, baking powder, and salt. Add to egg mixture. Beat until smooth. Fill a pot or deep-fryer half-full with oil. Heat until oil gets to 350 degreesF. Drop dough into hot oil by the tablespoonful. Fry until golden brown. Remove from oil and drain on a paper towel. Dust with powdered sugar. Drizzle with warm chestnut honey. Serve immediately.
