Ricotta Corn Meal Waffles Recipe

These end up super light and fluffy... our airiest (sp?) waffles yet! The slightly tart raspberries go really well with the honey whipped cream, and could almost be it's own dish! I also liked the waffle just on its own.

Recipe Ingredients for Ricotta Corn Meal Waffles

3/4 c part skim ricotta
1 c milk
3 eggs, separated
1/4 c sugar
1 c all-purpose flour
1/4 c yellow corn meal
1/2 t baking powder
1/8 t salt
4 T butter, melted

Recipe Directions for Ricotta Corn Meal Waffles

  1. In a large bowl, whisk the ricotta with the milk, egg yolks and sugar. In a medium bowl, whisk the flour with the cornmeal, baking powder and salt. Whisk the dry ingredients into the ricotta mixture until combined. Stir in the melted butter.

  2. In a large bowl, using an electric mixer, beat the egg whites until firm peaks form. Fold the egg whites into the waffle batter.

  3. Spoon about 1 cup at a time onto hot waffle iron and cook until crispy and delicious!

  4. Top with whipped cream and raspberries. Enjoy!!
