Ricotta prepared at home using milk, yogurt, vinegar, salt

Recipe Ingredients for Ricotta Cheese, Non Fat, Low Salt (Homemade)

8 cups Milk, Nonfat, Fluid
170 grams, Light Thick and Creamy French Vanilla
1 tspn salt
3 tbsp, Vinegar

Recipe Directions for Ricotta Cheese, Non Fat, Low Salt (Homemade)

  1. Heat milk & yogurt to 180 to 185 degrees; scalding, but not boiling. Remove from heat add the vinegar; stir for about 1 minute; cover and let sit for 2 hours (or longer).

  2. After mixture sits for alloted time; scoop curds from cooking pan and strain through cheesecloth. Let curds sit for about 2 hours; tighten cheesecloth to squeeze out liquid. Continue to squeeze as long as liquid is clear. Once it becomes milky stop squeezing.

  3. Store in a closed container. Use within 3 to 4 days.
