For use in pasta, manicotti or shells.

Recipe Ingredients for Ricotta Cheese Filling

1/2 c part skim ricotta
1 tbsp capers
1 clove of garlic
1 tsp basil
1 tsp oregano
1 tsp parsley
1 1/2 c chopped baby spinach
1 tbsp extra virgin olive oil

Recipe Directions for Ricotta Cheese Filling

  1. heat olive oil in medium skillet on med heat

  2. mince garlic and add to oil with basil, oregano, and parsley.

  3. once garlic is simmering for a min, add the spinach and capers. Stir until spinach is mostly wilted.

  4. stir in ricotta cheese and turn off heat.

  5. Stuff pasta shells, I use 4 jumbo shells for this much filling.

  6. ** The fat comes from the ricotta. You could use fat free/reduced fat but I find I like the texture and flavor of part skim better.
