biscuit base ricotta filled with berries

Recipe Ingredients for ricotta cakes

150 g malt biscuits
1 tbsp butter, salt reduced, melted
250 g low fat ricotta
150 g cream cheese fat free
2 egg whites, beaten
1/4 cup caster sugar
1/2 cup berries

Recipe Directions for ricotta cakes

  1. Crush biscuits blend with butter.

  2. Press into cupcake tins as base only.

  3. Refridgerate.

  4. Blend ricotta,cream cheese, sugar, egg whites and a few of the berries.

  5. Divide ricotta mix evenly over bikkie base.

  6. Cook in preheated oven at 150C for 10 mins.

  7. Remove and divide remaining berries among the cakes place on top.

  8. When tin is cool enough put in fridge for 1 hour.

  9. Carefully remove from tin and serve with fat free ice cream or a light syrup and coffee.
