Rick's award-winning venison chili

Recipe Ingredients for Rick's Chili

2 T olive oil
8 cloves garlic
2 large onions
1 T chopped thyme
1 lb sausage
3 lbs venison
5 T chili powder
3 T paprika
5 T ground cumin
24 oz crushed tomatoes
24 oz tomato sauce
14 oz beef stock
12 oz beer

Recipe Directions for Rick's Chili

  1. saute garlic and onions in olive oil

  2. add sausage and venison to brown

  3. add herbs and spices

  4. when meat is browned, add tomatoes, tomato sauce, and beer

  5. simmer until meat is tender
