Recipe Ingredients for rick stein green fish soup

280 grams Whiting
1 cup Lemon Grass (Citronella)
40 grams Garlic
55 grams Green Chillies
25 grams Turmeric Root
50 grams Shallots
1 serving low fat coconut milk
1 serving low fat coconut milk
1 serving thai shrimp paste
2 Teaspoon Juice

Recipe Directions for rick stein green fish soup

  1. put 300ml water into a pan with 1/2tsp salt and the fish. simmer for 4min.

  2. put lemongrass, garlic, chillies, turmeric, ginger, shallots, shrimp paste and 2-3 tablespoons cold water into a food processor and blend to a very smooth paste.. transfer to a paste and add the coconut milk and 1 tsp salt. simmer 5minutes.

  3. remove the fish and water and break into flakes discarding skin and bones. add to the coconut milk mixture and strain into the cooking water from the fish and simmer for 3 minutes.. then blend into a stock. return to the pan on a low heat and add the lime juice

  4. add some cooked rice noodles to a bowl and top with a crunchy salad. pour over the stock and top with some peanut sauce and some mixed leaves (basil, watercress, spinach etc)
