Recipe Ingredients for Rick Bayless' Mexican Rice Supper with Zucchini and Corn

1 3/4 cups diced tomatoes
1 jalapeno pepper, seeded and diced
1 garlic clove, minced
3 tablespoons chopped fresh cilantro
1 small white onion, finely chopped
1 tablespoon olive oil
1 cup rice
1 cup vegetable broth
1 medium zucchini, diced
1 cup whole kernel corn

Recipe Directions for Rick Bayless' Mexican Rice Supper with Zucchini and Corn

  1. Make Essential Chopped Tomato Salsa: mix tomatoes, pepper, garlic and cilantro. Rinse onion in strainer under cold water, shake off excess and add to the mixture.

  2. Heat olive oil in bottom of medium saucepan over medium heat. Add rice to the pan, stir regularly until lightly browned; around 7 minutes. Add the salsa, raise the heat to medium high and cook, stirring every once in a while, until very thick and reduced; about 7 minutes. Add the broth (could use reduced fat chicken broth) to rice mixture, stir once and cover pan. Reduce heat to low and cook for 10 minutes. Add zucchini and corn, re-cover and cook for another 5 minutes. Uncover and bite into a grain of rice-it should be just about cooked through. (If it isn't, continue cooking for another 5 minutes or so). Turn off the heat, re-cover and let stand for 5 to 10 minutes to complete cooking. When ready to serve, sprinkle with more chopped cilantro.
