Recipe Ingredients for Richard's Easy Curry

1 onion
4 carrots
150 g curry paste
400 g turkey
400 g can tomatoes
2 peppers
5 spring onions
200 ml double cream
25 g coriander
300 g basmati rice

Recipe Directions for Richard's Easy Curry

  1. Slice the onions, carrots, peppers and spring onions thinly. Chop the coriander. Slice the turkey into stir fry size pieces.

  2. Gently fry the onions in a saute pan until starting to soften then add the carrots. Fry for 4-5 minutes until the carrots start to soften.

  3. Add the curry paste coating the onions and carrots and gently fry for 1-2 minutes.

  4. Add the turkey and stir fry, then add the tomatoes and cook for 3-4 minutes.

  5. Add the peppers and stir, then the sprong onions and stir, finally add the cream and 1/2 the coriander and stir into the mixture. Try to do these last processes as quickly as possible.

  6. Serve onto a bed of rice and garnish with the remaining coriander.
