Recipe Ingredients for Richard's Chicken Pot Pie with French Toast topping

268 g Chicken, poached
68 g Carrots, blanched
125 g Cauliflower, blanched
1 cup Peas, Frozen
1 tbsp Butter, unsalted
1 tbsp Olive Oil
3 tbsp Flour
2 cups Chicken Broth
1 tsp Lemon Juice
1/3 cup Sour Cream, Lite
3 slices Bread, white Sheepherders
1 egg
1/4 cup Milk, Lactaid Non-Fat

Recipe Directions for Richard's Chicken Pot Pie with French Toast topping

Poach chicken, cool and shred. Blanch carrots and cauliflower. Put butter and olive oil into pan, heat and add flour for roux then add chicken broth, thicken and add lemon juice and sour cream. Cut crusts off bread, and cut bread slices into triangles, dip in egg and milk mixture. Put chicken, vegetables into baking dish, add broth mixture, stir, and cover with dipped bread. Bake for 30 minutes in 350 degree oven or until bread is nicely browned
