Easy to assemble, deeply satisfying vegetarian dish

Recipe Ingredients for Rich Vegetarian Moussaka

1 eggplant, unpeeled
2 large potatoes, peeled
1 medium zucchini, unpeeled
300 g lentils, cooked
600 g dolmio pasta sauce
10 g flour
4 tbsp margarine
1 cup milk
1/2 cup colby cheese, shredded
14 g breadcrumbs

Recipe Directions for Rich Vegetarian Moussaka

  1. Cut into 1cm slices, salt and drain eggplant for 30 minutes. Cut potato and zucchini into thin slices.

  2. Microwave potato for 3 minutes, adding zucchini and microwaving for a further minute. Bake eggplant in oven for 15 minutes until softened.

  3. On stove-top, melt butter and add flour to form a roux. Gradually mix in 1 cup milk, 1/2 cup of cheese, and seeded mustard to taste.

  4. Layer vegetables, drained lentils and pasta sauce in a casserole or other baking dish.

  5. Top with cheese sauce, sprinkle with bread crumbs, and bake in hot oven for 30 minutes.

  6. Serve with crusty bread and green salad.
