Very tomatoey soup with beef and veggies

Recipe Ingredients for Rich Vegetable Beef Soup (Low Sodium)

12 oz chuck roast (1 lb uncooked)
1 T canola oil
1 c chopped celery
1 c chopped onion
1 T chopped garlic (2-4 cloves)
6 oz tomato paste no salt added
8 oz tomato sauce no salt added
18 g (1 T) beef better than bouillion
1 lb frozen mixed vegetables
2 T sugar (mellows acid of tomatoes)
1 T herbs (bouquet garni)
1/2 t black pepper
4 c water

Recipe Directions for Rich Vegetable Beef Soup (Low Sodium)

  1. Brown cubed beef in the oil

  2. Add onions, garlic, celery, cook 3-5 minutes

  3. Add remainder of ingredients

  4. Bring to simmer

  5. Simmer for 20-30 minutes

  6. Add more water for thinner soup if desired
