A rich and satisfying italian style tomato sauce that is delicious with just about anything.

Recipe Ingredients for Rich Tomato Sauce

2 lbs tomatoes
2 oz virgin olive oil
2 tsp smoked paprika
6 cloves garlic
3 large onions
1/4 tsp salt
1/2 tsp pepper
12 oz can tomatoes
3 oz sundried tomatoes

Recipe Directions for Rich Tomato Sauce

  1. In a roasting pan place halved tomatoes. Brush with some of the olive oil and sprinkle with smoked paprika.

  2. Into another pan place whole onions and whole garlic - unpeeled. Brush onions with a little of the olive oil.

  3. Bake both pans in a medium oven for 1 to 1 and a half hours. Tomatoes should be starting to shrivel and onions to caramalise.

  4. Meanwhile in a medium pan place canned tomatoes and sundried tomatoes and remaining olive oil and pepper & salt and simmer till about 2/3rds volume.

  5. Allow ingedients to cool. Squeeze garlic centres into the canned tomatoe mix, then place everything into a food proceeser and process til reasonably smooth.

  6. I divide this mix into containers to freeze and use as required by defrosting and heating on stove. It is soooo yummy that I make triple quantities so as not to run out!
