Recipe Ingredients for rice, veggies and pork

2 cups brown rice
1 tbs olive oil
10 oz pork
1 eggplant
1 red bell pepper
1/2 onion
3 tomatoes
2 tbs tomato paste

Recipe Directions for rice, veggies and pork

  1. cook 1 cup brown rice with 2 tsp olive oil in 2 cups broth or water to produce 2 cups rice.

  2. in a separate pan sautee 1/2 onion, chopped, in 1 tsp olive oil. add 2 tbs tomato paste. chop remaining ingredients, and when the onion is transluscent, add them. add 1/2 cup water, season as preferred and cover, simmering until the pork is done. serve over the rice.
