Rice, Carrots, Peas & Mushrooms in a flavorful lemon parmesan sauce

Recipe Ingredients for Rice-Veggie Medley

1 cup uncooked white rice
2 1/2 cups Chicken Broth
1/4 cup realemon juice
1 cup sliced mushrooms
1/2 cup peas
1/2 cup carrots
1/2 cup shredded parmesan cheese
1/4 cup olive oil

Recipe Directions for Rice-Veggie Medley

  1. Cook rice in chicken broth, we used less sodium chicken broth.

  2. While rice is cooking mix lemon juice, olive oil and shredded parmesan cheese

  3. When rice is done cooking add carrots, peas and mushrooms.
