Rice and Tuna Pie Recipe

Tuna quiche-like pie in a rice crust.

Recipe Ingredients for Rice and Tuna Pie

1 cup cooked rice
3 eggs
1 cup shredded cheddar cheese
1 can tuna, drained
1 cup milk
1/8 tsp salt
1/8 tsp pepper
1/4 cup chives, chopped
1 medium tomato, sliced

Recipe Directions for Rice and Tuna Pie

  1. Beat one egg and combine with rice.

  2. Using back of spoon, press rice mixture into bottom of 9" pie plate.

  3. Spread half of cheese, then half of tuna over rice. Repeat layers.

  4. Combine two eggs, milk, salt, pepper and chives. Pour over tuna.

  5. Bake at 400 for 20 minutes.

  6. Cover pie with tomato slices and return to oven for 5 additional minutes.
