Recipe Ingredients for Rice with Tomato Chick Pea Sauce

1/2 cup Rice, Brown, Long-grain
2 tbsp ICBINB! Light (Soft)
3 clove Garlic
1/2 cup, chopped Onions
14 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup Spinach
14 1/2 oz Tomatoes

Recipe Directions for Rice with Tomato Chick Pea Sauce

  1. Add 1 cup of water and 1 Tbsp margarine to a saucepan. Stir in 1/2 cup brown rice. Reduce heat to low. Cover pan and simmer for 45 minutes.

  2. Chop 1/2 cup onion and 3 cloves of garlic. Add to a different saucepan with 1 Tbsp margarine. Saute for about 3 minutes.

  3. Add 14 oz (1 can) garbanzo beans and 14 oz (1 can) stewed tomatoes to the saucepan.

  4. Chop 1 cup raw spinach and 1 medium tomato. Add to the saucepan.

  5. Cook the tomato sauce for about 30 minutes (while the rice is cooking). Stir often.

  6. Serve the tomato sauce over the rice.
