Wild rice, cucumber, carrot, and salad dressing stuffed into a tomato!

Recipe Ingredients for Rice-Stuffed Tomatoes

4 1/2 oz wild rice
21 cucumber, small
1 medium carrot
1/4 cup salad dressing
6 medium tomatoes

Recipe Directions for Rice-Stuffed Tomatoes

  1. Cook rice in saucepan according to package directions. Set aside and cool.

  2. Coarsely grate one cucumber and carrot into bowl.

  3. Stir in the cooled rice mixture.

  4. Add salad dressing, mix until well combined

  5. Chill in refrigerator for several hours or overnight.

  6. When ready to serve, cut off tops of tomatoes and remove pulp

  7. Spoon rice and vegetable mixture into shells
