This is an interesting and subtle dessert, very unusual but tasty.

Recipe Ingredients for Rice: Sticky Coconut with Mangos

3 cups sushi rice
2 cups canned coconut milk
3/4 cup brown sugar (use palm sugar!)
1 teaspoon salt
3 ripe mangos

Recipe Directions for Rice: Sticky Coconut with Mangos

  1. Rinse rice until water runs clear. Soak rice overnight in water or coconut water to cover. Drain. Bring a stockpot half filled with water to a boil. Place a cheesecloth over a strainer and add rice. Place in stockpot (making sure strainer does not touch water) and cover. Steam 25 minutes or until rice is shiny and tender.

  2. Meanwhile, place the coconut mil in a pot and hear over medium heat just to below a boil, add sugar and salt and stir to dissolve.

  3. Place rice into a bowl and pour 1-1 1/2 cups of the hot milk over the rice and stir. Let stand 20-60 minutes.

  4. Peal mangos and slice. Fan out mango slices on individual plates and place a scoop of rice along side it. Drizzle some of the remaining coconut milk over it and serve.

  5. Will keep covered 24 hours in the refrigerator. Rewarm by steaming or in the microwave.
