Recipe Ingredients for Rice salad

3 cups basmati rice
1/4 cup pecans
1/4 cup raisins
2 tbsp shallot
1/4 cup lemon juice
1/8 cup olive oil
1 tbsp dijon mustard

Recipe Directions for Rice salad

  1. boil basmati rice by package directions and allow to cool

  2. toast pecans in a clean, dry skillet until fragrant

  3. chop shallot and add to raisins

  4. combine all and mix vinigrette

  5. pour over rice mixture and allow to sit for 30 minutes before serving
