Recipe Ingredients for Rice Salad

1/2 cup brown rice
1 tsp salt
1/2 tsp pepper
2 carrots, 1/4 inch cubed
4 tbsp olive oil
2 tsp red wine vinegar
1/8 tsp oregano
1 tsp garlic powder
1 cup corn
1 cup peas, frozen
2 stalks celery, 1/4 inch cubed, plus 1 tbsp leaves chopped
1/4 cup red onion, thinly sliced

Recipe Directions for Rice Salad

  1. in small sauce pan cook rice as per package

  2. in another sauce pan fill with water, salted added. add carrot and bring to boil, boil for 2 minute. use slotted spoon to remove and place in small bowl. toss with 2 tbsp olive oil, vinegar and oregano. season with salt and pepper.

  3. in same pan add corn & boil for 2 min; remove and transfer to corn bowl. add peas and cook 1 minute; transfer to bowl.

  4. add the cooked, cooled rice, cubed celery, chopped celery leaves and onion to bowl. drizzle with the remaining 2 tbsp olive oil and toss.
