Recipe Ingredients for Rice Salad

1 cup brown rice
1 onion, chopped
1 3/4 cups mushrooms, sliced
2 cloves garlic, minced
3 tbsp olive oil
2 tbsp red wine vinegar
6 scallions, chopped
1/4 tsp mustard powder
1/4 tsp chives
1 tbsp chopped fresh parsley
13 oz artichoke hearts

Recipe Directions for Rice Salad

Mix ingredients well and marinate for about an hour before serving.
