Recipe Ingredients for rice salad with garbanzo beans and tomatoes

2 1/2 cups brown rice
2 tbsp olive oil
2 tbsp red wine vinegar
1/8 tsp red pepper flakes
1 lb cherry tomatoes
2 cups chickpeas
1/4 cup mint

Recipe Directions for rice salad with garbanzo beans and tomatoes

  1. Cook rice. Transfer to a large bowl.

  2. Mix oil, vinegar, and red pepper flakes in a small bowl. Pour over rice and toss well.

  3. Mix half tomatoes and half garbanzo beans into rice. Add mint and mix well. Season with salt. Top salad with remaining tomatoes and garbanzo beans.
