Recipe Ingredients for Rice-A-Roni Artichoke Chicken Salad

6 oz rice
1 1/2 T olive oil
2 c water
6 oz artichoke hearts, marinated
6 oz water chestnuts, sliced
3 oz olives, sliced
2 T mayonnaise
2 T fat free sour cream
4 scallions
10 oz chicken breast

Recipe Directions for Rice-A-Roni Artichoke Chicken Salad

use chicken or fried rice style rice-a-roni. pan fry the rice in large skillet until vermicelli is browned. slowly! add water, bring to a boil, cover, reduce and simmer 17-20 minutes until rice is tender. allow to cool a bit then add in all the other ingredients. chill and serve.
