This is a fairly good for you recipe, that is made on the stovetop.

Recipe Ingredients for Rice Pudding

3/4 cup brown rice
2 cups skim milk
1/3 cup sugar
2/3 cups raisins
1/4 tsp salt
1 tbsp butter
1 egg, beaten
1/2 tsp. vanilla

Recipe Directions for Rice Pudding

  1. Cook rice according to package dirrections

  2. Combine rice and 1 cups of milk, sugar and salt in a large pot

  3. Cook on medium heat, 15-20 minutes, stirring frequently to prevent scorching, until thick and creamy

  4. Blend remaining cup of milk and egg

  5. Stir blended milk and egg into rice mixture

  6. Add raisins

  7. Cook 2 minutes longer, stirring constantly

  8. Add butter and vanilla

  9. Store and cool in an air tight container in the fridge until ready to eat

  10. sprinkle with cinnamon as desired
