Rice Pudding with Raisins and Cinnamon

Recipe Ingredients for Rice Pudding

1 cup 1% milk
2 cups water
1 cup skim milk
2 oz raisins (about 1/3 cup)
2 eggs
1 cup uncooked rice, jasmine
1 tsp vanilla
1 tsp cinnamon
1/4 cup sugar

Recipe Directions for Rice Pudding

  1. Bring 1% milk and 1 cup water to boil, add rice, reduce heat and cook until rice is done (15-20 minutes.) Add remaining water as needed while cooking to keep rice from drying out.

  2. Mix skim milk, eggs, vanilla, sugar.

  3. Soak raisins in hot water for 5 minutes.

  4. Add some of the hot rice to the egg mixture to temper it, then add the egg mixture to the rice. Drain raisins and add.

  5. Add cinnamon.

  6. Bring back to boil, cook for 1-2 minutes.
