Creamy rice pudding, just like my great-grandma used to make! An indulgence not to be taken all the time, but very good when you do!

Recipe Ingredients for Rice Pudding

2 3/4 cup skim milk
1/3 cup long grain rice
1 pinch of salt
1 egg
1/3 cup sugar
1/2 tsp vanilla
1/2 cup raisins (or Craisins)

Recipe Directions for Rice Pudding

  1. add milk, rice and salt to saucepan. Bring to boil, lower heat to simmer and cover. Cook for 1 1/4 hour, stirring ocassionally.

  2. In a separate bowl, add egg, sugar and vanilla together and whip for 1 minute.

  3. When rice mixutre is cooked turn to medium heat. Add some of the rice mixture to the egg mixture to warm up a little. Slowly add egg mixture to rice mixture stirring constantly. Cook for 1 minute and turn off heat. Add 1/2 cup raisins. If pudding seems thin, a little dissolved corn starch can be added after the egg mixture is added to thicken it.
