Delicious rice pudding that is quick and easy. It's a great way to use left over rice.

Recipe Ingredients for Rice Pudding

1 1/2 c cooked rice
2 c 1 % milk
1/3 c sugar
1/4 tsp salt
1 egg, beaten
2/3 c raisins
1 T butter
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Rice Pudding

  1. In a large saucepan combine rice, 1 1/2 C milk, sugar and salt. Cook over medium heat until thick and creamy, about 15-20 minutes.

  2. Stir in remaining 1/2 C milk, egg, and raisins. Cook 2 more minutes stirring constantly.

  3. Remove from heat. Stir in butter and vanilla, cimmamon and nutmeg. Serve warm.
