Recipe Ingredients for Rice Pudding

4 tbsp rice
4 cup milk
1 dash salt
3 eggs
1/2 cup sugar
1 tsp. vanilla

Recipe Directions for Rice Pudding

  1. Put uncooked rice, milk and salt in the top of the double boiler and cook for 1 1/4 hours. Yes it really takes this long but it is worth it. Cook this while you are cooking something else on the stove.

  2. Stir it frequently so it doesn't form a skin or stick to the bottom.

  3. In a seperate bowl mix the eggs sugar and vanilla. Take the milk mixture off of the heat. Whisk in the egg mixture until well incorporated.

  4. Put the mixture in the double boiler back on low heat and continueously stir until the mixture thickens, about 10 minutes. Once it thickens pour into a 4 cup container, top with freshly grated nutmeg and let cool before putting in the fridge.

  5. makes 8 1/2 cup servings
