Rice, custard, raisins. All in a hot pudding. Delicious! Best way to use up extra rice from dinner.

Recipe Ingredients for Rice Pudding

2 eggs
2 cups skim milk
1 cup rice (cooked)
1/4 cup raisins
1/4 cup brown sugar
1/2 tsp salt

Recipe Directions for Rice Pudding

  1. Preheat oven to 325 degrees and place a pan of water in oven to heat.

  2. Beat together eggs and milk in a casserole dish.

  3. Add rice, raisins, brown sugar, and salt and stir well.

  4. Sprinkle cinnamon on top and place casserole dish in the pan of hot water in the oven (should be centered in the oven).

  5. Oven poach at 325 degrees for approximately 1 hour (or until "cake test" comes out clean).
