Rice Pudding Recipe

This a vegan version of one of my favorite deserts. It is not low calorie though. Be careful one serving is about 1 cup.

Recipe Ingredients for Rice Pudding

1 1/2 cup dry rice (cooked & day old yeilds 3 cup)
3 cup soymilk
3 cups water
3/4 cup raisins
3 T cinnamon
1 1/2 t nutmeg
3 T rum
1 1/2 t salt
1/4 cup orange zest (or zest from 1 orange)
3/4 cup orange juice (fresh from orange you just zested)
3/4 cup brown sugar

Recipe Directions for Rice Pudding

  1. Cook rice day before let sit overnight in fridge.

  2. In saucepan combine day old rice, soymilk and water, and raisins.

  3. Bring to boil let simmer 5 minutes.

  4. Add orange zest, orange juice, salt, and sugar. let simmer 5 minutes.

  5. Add all spices. simmer until creamy and sticky.
