Rice Pudding Recipe

Makes 4 servings



dessert/eat in the morning sprinkled with raisins. If using vanilla pudding sprinkle with cinnamon as well or lemon zest and dried cranberries. Note: I used brown rice instead of instant

Recipe Ingredients for Rice Pudding

3 cups brown rice
3 cups soy milk
30 g pudding
1/2 cup coconut

Recipe Directions for Rice Pudding

  1. MIX 3 1/2 cups milk, 1 pkg (6-serving size) of cooked Jell-O Vanilla Pudding & Pie Filling, and 1 cup instant white rice in medium saucepan.

  2. COOK and stir over medium heat until mixture boils. Remove from heat.

  3. STIR in a handful of dried cranberries and a spoonful of grated lemon rind. Cover surface of pudding with plastic wrap; cool 10 minutes. Stir. Serve warm.

  4. for brown rice. Mix 3 cups cold milk with pudding mix, whisk 1-2 mins then add to 1 cup brown rice

  5. Bring to boil, stir (it will stick to the bottom if you heat too high too fast)

  6. Cook low heat for 45mins

  7. Add raisins, stir, enjoy warm
