Adapted from The Vegetarian Meat and Potatoes Cookbook. You can also add 1 tsp vanilla extract and/or 1 ounce slivered almonds. I left out both when I made the pudding. You can also substitute soy milk for the milk.

Recipe Ingredients for Rice Pudding with Blackberries

3/4 cup basmati rice
1 cup nonfat evaporated milk
1 1/2 cups nonfat milk
1/4 cup maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/8 tsp salt
1 pint blackberries

Recipe Directions for Rice Pudding with Blackberries

  1. Cook the rice according to package instructions.

  2. In a saucepan, mix the cooked rice with the rest of the ingredients, except the blackberries. Cook over low heat for 20 to 25 minutes, until the pudding is thick and creamy.

  3. Spoon the pudding into custard cups and refrigerate. Before serving, top each cup with 1/6 of the blackberries.
