Ingrid Hoffman's rice pudding recipe halved with the egg yolk and cloves excluded.

Recipe Ingredients for Rice Pudding (Arroz con Leche)

1/2 cup rice
2 cups water
1 tsp lemon zest
1/8 tsp nutmeg
1 1/4 cups low-fat milk
6 oz sweetened condensed milk
1 egg white
1 tsp vanilla extract

Recipe Directions for Rice Pudding (Arroz con Leche)

  1. Soak rice, lemon zest, nutmeg, and one cinnamon stick in water for one hour. Turn on heat to high for five minutes then turn down to med-low for another ten minutes until water is almost completely absorbed.

  2. Whisk the rest of the ingredients together and add to the pot. Turn heat to med-high for five minutes then turn down for another 12-15 minutes, until thickened.

  3. The finished recipe will be thinner than traditional rice pudding because it will thicken as it cools.
