High in fiber and vitamin A! I bake this with pork chops or fish for a complete meal, or serve with cottage cheese.

Recipe Ingredients for Rice Primavera

1 cup dry brown rice
3 small tomatoes, chopped
1 medium onion, chopped
1 medium carrot, chopped
1 small squash, zucchini, baby, chopped
1/2 red bell pepper, chopped
2 cups raw baby spinach, chopped
1/2 cup peas
1 cup classico tomato and basil
1 tbsp garlic powder (or to taste)
2 tsp dried dill
1/2 tbsp olive oil

Recipe Directions for Rice Primavera

  1. Cook rice for not quite as long as it says to, you want it slightly firm so it doesn't mush when you add the other ingredients.

  2. Saute veggies minus peas in the olive oil. When they're done, add the sauce and the peas. Add the rice and simmer for 15 minutes or so to let the flavors mix. Alternately, you can put it in a covered baking dish and bake it with meat to finish it off.
