Rice and spring veggies in a savory sauce.

Recipe Ingredients for Rice Primavera

2 1/2 cups brown rice
6 cups water
1 tbsp salt
1/2 cup green onions, chopped fine
1 red bell pepper, chopped
4 cups broccoli florets, bite-sized pieces
8 carrots, julienned
2 1/2 cups kidney beans, cooked and drained
1/2 cup lemon juice
4 cloves garlic
4 tbsp soy sauce, Nama Shoyu
4 tbsp Olive oil, extra virgin cold-pressed
2 tsp basil

Recipe Directions for Rice Primavera

  1. Cook rice in water with salt for 50 minutes (check package directions).

  2. Make dressing with the last 5 ingredients by blending in blender and set aside.

  3. After rice is done, add chopped onions, peppers and beans and replace lid to help them warm up and soften vegetables.

  4. Steam broccoli and carrots until almost tender, add to rice and stir to mix.

  5. Add dressing and stir once again.
