Rice Pilaf Recipe

Makes 4 servings



Betty Crocker's version of rice pilaf with canola oil replacing butter. Also I chose to add mushrooms to the recipe as indicated by the recipe book.

Recipe Ingredients for Rice Pilaf

1 tbsp olive oil or canola oil
1/4 cup onion
1 cup uncooked long grain rice
2 cup low sodium chicken broth
1 serving, 1/4 tsp Lite Mixture Salt
4 oz mushrooms, (6 medium)

Recipe Directions for Rice Pilaf

  1. Add oil in 3-quart saucepan over medium heat. Cook onion in oil about 3 minutes, stirring occasionally, until tender.

  2. Stir in rice and mushroom. Cook 5 minutes, stirring frequently. Stir in broth and salt.

  3. Heat to boiling, stirring once or twice; reduce heat to low. Cover and simmer 16 minutes (do not lift cover or stir); remove from heat. Let stand covered 5 minutes.
