Basic rice dish, serve as side or use as base for casserole.

Recipe Ingredients for Rice Pilaf

1 tablespoon olive oil (can use cooking spray instead)
1 onion, chopped
4 tablespoons garlic
14 oz rice
28 ounces chicken broth

Recipe Directions for Rice Pilaf

  1. sweat onion in olive oil until transparent then add garlic.

  2. Add rice and stir. Add chicken broth (I use college inn low sodium/low fat).

  3. Cover and put in a 350 degree oven for aprox. 20 minutes.

  4. I normally use low fat/sodium chicken broth and just enough oil so the onions don't start to brown. The amounts of onion and garlic are to taste, more or less can be used.
