Recipe Ingredients for Rice Pilaf with Carrots and Raisins

4 tablespoons maple syrup
3 cups vegetable broth
1 1/4 cups thinly sliced carrots
2 tablespoons raisins
1 tablespoon vegetable oil
1 1/2 cups basmati rice
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 tablespoons sunflower seeds

Recipe Directions for Rice Pilaf with Carrots and Raisins

  1. Mix the maple syrup and vegetable stock in a medium saucepan. Cook over low heat for 2 to 3 minutes.

  2. In a large skillet, saute the carrots and raisins in the oil for 10 minutes. Add the rice to the carrot mixture, and stir to coat the rice with oil. Stir in the syrup and stock and the remaining ingredients except the sunflower seeds. Heat the mixture to boiling; reduce the heat. Simmer covered for 35 to 40 minutes, until all the stock is absorbed. Serve sprinkled with 1 tablespoon of sunflower seeds per serving.
