Brown rice topped with sauteed bell peppers, onion, garlic, and mushroom. Use minced garlic from a jar to shorten prep time.

Recipe Ingredients for Rice and Peppers

1 1/2 cups uncooked brown rice
1 yellow bell pepper, cut into bite-sized pieces
1 green bell pepper, cut into bite-sized pieces
1 orange bell pepper, cut into bite-sized pieces
8 mushrooms, sliced
1/2 large yellow onion, coarsely chopped
1 clove minced garlic
2 tbsp. olive oil

Recipe Directions for Rice and Peppers

  1. Prepare brown rice according to package directions.

  2. While rice is cooking, prepare vegetables.

  3. Heat olive oil in large skillet over medium heat. Add peppers, onion, mushrooms, and garlic. Saute over medium heat, stirring occasionally, 15-20 minutes.

  4. Serve 1/2 cup of vegetables over 1 cup cooked brown rice.
