A tasty soup for a cold day and can easily be made vegan. See second paragraph of directions for vegan substitutes.

Recipe Ingredients for Rice, Pea, and Mushroom Soup with Oregano

2 tbsp olive oil
1 medium onion
1/2 tsp rosemary, dried
2 cups button mushrooms, sliced
3 cloves garlic, minced
1/2 tsp salt
1 tsp black pepper, freshly ground
2 1/4 cup cream of chicken soup, campbell's
1 cup chicken stock
4 1/2 cup water
1 cup white rice, uncooked
2 cup peas, frozen
1 tsp oregano, dried

Recipe Directions for Rice, Pea, and Mushroom Soup with Oregano

  1. Heat the olive oil over medium heat in a stockpot. Saute the onion with the rosemary for 5 min, stirring often. The onion will begin to brown. Add the mushrooms, garlic, salt, and pepper, and stir and sate about 2 minutes, then add the stock. Cover and bring to a boil over high heat, then stir in the rice. Return to a boil, reduce heat to medium and simmer, uncovered, 15 minutes, stirring occasionally. Add the peas and oregano, and continue to cook until rice is tender, about 5 minutes. Serve hot.

  2. I altered this for ingredients on hand. The original directions substitute the chicken stock/cream of chicken soup mixture with 7 cups of Homemade Vegetable Stock or 7 cups of vegetable stock made from low-sodium vegetarian boullion (broth cubes). Original recipe from The Vegan Gourmet.
