Makes 6 servings



For anyone with allergies, this has no egg or wheat. I would also like to try this with brown rice and Splenda Brown Sugar. High carbs but they're good carbs!

Recipe Ingredients for Rice Pancakes

1 cup cooked rice
1 1/4 cups rice flour
1/8 cup Splenda
2 T applesauce
2 tsp baking powder
1 T vegetable oil
1 serving Silk Pure Almond Unsweetened Vanilla - 1 cup

Recipe Directions for Rice Pancakes

  1. Mix together all ingredients for 2 minutes.

  2. Lightly oil a large skillet or griddle and place over medium heat. Pour 1/4 cups of batter onto the pan.

  3. Cook until the underside is golden brown. Flip and cook until the other side is also golden brown, 2 to 3 minutes per side. Check to make sure center is done.

  4. Top with Agave Nectar, fresh fruit or maybe some Greek Yogurt! Use your imagination.
