Recipe Ingredients for Rice, onion & manchego patties

1 1/2 oz Manchego
1/2 cup brown rice
1/2 cup white rice
1 egg
1/2 cup diced onion

Recipe Directions for Rice, onion & manchego patties

  1. dice up 1/3 of a sweet yellow onion, 1 slice of manchego about 1" wide by 2" long diced, mix with rice microwaved so lose.

  2. Combine in a bowl, add 1 egg (can add 1/4C milk too if desire) mix well.

  3. Then on a griddle (medium heat) spray olive oil spray or pam and make little latke, pancake sized piles (about 1/2C) let brown. Then spray the top of the patties again then flip over.

  4. Serve with some mango chutney or fresh strawberries & jam (quince, apricot, mango flavored might be best) it helps to cut the sharp flavor of the manchego.

  5. Best served off the griddle, not reheated the following day.
