A simple recipe of noodles and vegetables topped with oyster sauce. Easy to prepare and delicious. I recommend using the wide rice noodles for this. You can also substitute pak choi for the pe-tsai if you prefer a greener leaf cabbage. It is slightly more bitter and flavorful, like romaine lettuce versus iceberg. You can add chicken breasts, beef or shrimp to this recipe as well.

Recipe Ingredients for Rice Noodles with Pe-tsai (Chinese Cabbage)

200 grams (1/2 package) wide rice noodles
3 cups (1 head) cabbage, chinese, raw
1 cup oyster sauce
2 tablespoons peanut oil

Recipe Directions for Rice Noodles with Pe-tsai (Chinese Cabbage)

  1. Bring large pot of salted water to a boil. Pour in one half 400-gram package of noodles and cook until tender. Pour into colander and rinse with cool water. Drain well and pat dry if necessary. Add 2 tablespoons of peanut (groundnut) oil to noodles to coat. Set aside.

  2. Chop off end of one head of Chinese cabbage and slice into 2 x 1" strips (makes approximately 3 cups). Place into vegetable steamer. Add lemon pepper, garlic powder, onion powder, and salt to taste. Pour 1-2" of water into a pot and bring to a boil. Place steamer into pot, cover tightly, and steam cabbage about five minutes or until tender. Add a couple of tablespoons (from the pre-measured cup) of oyster sauce and mix through the cabbage. Set aside.

  3. Heat wok on high. Brown oil-coated noodles until slightly golden, stirring thoroughly but careful so as not to break noodles. When noodles are browned add the cabbage and the remainder of the oyster sauce. Stir through, coating noodles with sauce, until combined thoroughly. Remove from heat. Allow to cool slightly before serving into bowls with chopsticks.
