Recipe Ingredients for Rice Noodles with Broccoli and Tofu

14 oz extra firm tofu
10 oz wide rice noodles
3 tbsp peanut oil
6 cloves garlic, minced
2 tsp fresh ginger, minced
3 cups broccoli florets
6 tbsp soy sauce
1 tbsp hoisin sauce

Recipe Directions for Rice Noodles with Broccoli and Tofu

  1. Cut tofu crosswise into 2 pieces, each about 1 inch thick. Place tofu on cutting board between layers of paper towels; put another cutting board on top to press moisture out. Place rice noodles in large bowl; cover with boiling water. Let soak 30 min or until soft.

  2. Cut tofu into bite-sized squares and blot dry. Heat oil in large skillet or wok over medium-high heat. Add tofu to skillet; stir-fry about 5 min.

  3. Add garlic and ginger to skillet, with shallots. Stirfry 2-3 min. Add broccoli, stirfry 1 min. Cover and cook 3 min or until broccoli is crisp-tender.

  4. Drain noodles well; stir into skillet. Return tofu to skillet; add soy sauce; stir-fry about 8 minutes or until noodles are coated and flavors are blended.
