Rice Noodle Salad with Thai Dressing

Recipe Ingredients for Rice Noodle Salad with Thai Dressing

3 1/2 oz rice noodles
2 1/2 tbsp sesame oil, divided
7 oz sugar snap peas
2 bell peppers, red and yellow
2 scallions
7 oz shrimp, cooked and peeled
1/4 cup cilantro
1 tbsp sesame seeds, toasted
1 shallot, peeled and diced
2 cloves garlic, peeled and crushed
1 chile pepper, seeded and minced
3 tbsp lime juice
2 tbsp fish sauce
1 tbsp soy sauce
2 1/2 tbsp brown sugar

Recipe Directions for Rice Noodle Salad with Thai Dressing

  1. Boil a pot of water. But noodles in a dish and cover with boiling water. Cover with plastic wrap and let stand 5 minutes, until noodles are tender. Drain and toss with 1/2 tbsp sesame oil.

  2. Blanche the snap peas in boiling water for 2 minutes. Refresh in a bowl of ice water and drain. Cut on the diagonal into 2 to 3 pieces.Halve, core and seed peppers, then cut into thin slices. Trim scallions and cut on the diagonal.

  3. Place shallot, galric, chile, lime juice, fish sauce, soy sauce, brown sugar and remaining seasme oil in a bowl and whisk together.

  4. Put shrimp, scallions, peppers and snap peas into bowl and add noodles, cilanto and sesame seeds. Pour dressing over and toss to coat.
