Recipe Ingredients for Rice Noodle Salad -- "Taste of Home" Journal

8 4/5 oz rice noodles
2 cups spinach
1 large carrot
1/2 cup pineapple
14 cup cilantro
1 green onion
1/4 cup unsalted peanuts
1/4 cup lime juice
2 tbsp. soy sauce
1 tbsp. brown sugar
1 tbsp. vegetable oil
1 tsp. sesame oil
1/2 tsp ground ginger
1/4 tsp red pepper flakes

Recipe Directions for Rice Noodle Salad -- "Taste of Home" Journal

  1. Cook noodles.

  2. Combine spinach, carrot, pineapple, and onion.

  3. Blend dressing ingredients.

  4. Drain noodles, add to spinach mixture.

  5. Drizzle with dressing and serve.

  6. For a main meal, serve with chicken or salmon.
