Nice and warm, my ultimate easy soup made with things that are always in my cupboard. This meal contains almost 6g of fiber per serving 1/4th of your daily recomended dosis) and 11% iron It is nice with croutons or a nice crispy garlic bread.

Recipe Ingredients for Rice - Mung Bean soup

1 T olive oil
2 T mung beans
2 T basmati rice
2 T red lentils
4 c boiling water
1/4 t chili flakes
1 serving bullion cube

Recipe Directions for Rice - Mung Bean soup

  1. Heat mildly oil in a duch oven.

  2. Put in rice, beans, lentils, stir until rice whitens (1-2 mins) on medium high heat

  3. Put in bullion and half the water.

  4. Mix every 5-10 minutes, adding boiling water as needed until beans are cooked (the other ingredients cook faster, lentils will be mushy, and the rice will be creamy)

  5. Stir chili flakes in and enjoy.

  6. Use low-sodium stock instead of the water and bullion for a hart-concious soup.

  7. You might need up to 6 cups of water depending of your rice and boiling intensity.
